Super refreshing and tasty, this smooth green gazpacho makes for a great snack or side dish that you and your kiddos will love!

Ingredients
2 cucumbers
1/2 cup water
2 garlic cloves
1/3 cup chopped mint
1/3 cup chopped chives
1/2 cup chopped parsley
3 tbsp apple cider vinegar
1/2 tsp salt
3/4 cup extra virgin olive oil
Preparation
Step 1
Blend cucumber, water, and garlic until pureed.
Step 2
Add mint, chives, parsley, apple cider vinegar, and salt to the blender and blend until smooth-ish.
Step 3
With the blender running on low, stream olive oil into the mixture.
Serve chilled and enjoy!
